Chicken and Dumplins



Don't you love chicken and dumplins they may not be goodfor you because of all the calories but they are good. I have always had trouble make the dumplins because mine get to thick. But the other day a friend of mine left me some on the stove and they were wonderful. Just right with the bread, chicken and broth. She would not tell me what she used for the dumplins but I ate them anyway. I love it when you cook the chicken and the bones are in the juice. My grandmother could make the best. And Mrs. Margaret at one of our churches made them just for me when we ate at church. You have to get the dough for the dumplins really thin then drop in the broth slow without them all going together. History of Chicken

The chicken is a descendant of the Southeast Asian red jungle fowl first domesticated in India around 2000 B.C. Most of the birds raised for meat in America today are from the Cornish (a British breed) and the White Rock (a breed developed in New England). Broiler-fryers, roasters, stewing/baking hens, capons and Rock Cornish hens are all chickens. The following are definitions for these:
Broiler-fryer – a young, tender chicken about 7 weeks old which weighs 2 1/2 to 4 1/2 pounds when eviscerated. Cook by any method.
Rock Cornish Game Hen – a small broiler-fryer weighing between 1 and 2 pounds. Usually stuffed and roasted whole.
Roaster – an older chicken about 3 to 5 months old which weighs 5 to 7 pounds. It yields more meat per pound than a broiler-fryer. Usually roasted whole.
Capon – Male chickens about 16 weeks to 8 months old which are surgically unsexed. They weigh about 4 to 7 pounds and have generous quantities of tender, light meat. Usually roasted.
Stewing/Baking Hen – a mature laying hen 10 months to 1 1/2 years old. Since the meat is less tender than young chickens, it's best used in moist cooking such as stewing.
Cock or rooster – a mature male chicken with coarse skin and tough, dark meat. Requires long, moist cooking.

How I Relax

Some people like to relax by running, like my roommate. She loves nothing more than to go on a long run outside even when it’s hot but for me, that sounds like torture. Some of my other friends like to read to get some rest and they like to go to the library and get a whole stack and plow through them one by one. Not me. I went to http://www.direct.tv/ when I first bought this place and got satellite just so I could watch game shows! I know it sounds silly but I really like the way they help me use my mind but there’s also no pressure when I watch them by myself – I’ll take anything: Wheel of Fortune, Jeopardy, you name it. I even like all the new reality tv game shows that are out like The Biggest Loser. I guess it’s not as bad for me to watch things like that rather than trashy reality tv or something else…there are definitely worse ways to relax, that’s for sure!

Fried Chicken

I had the best chicken for supper. I took a whole chicken had it cut at the grocery store because I like the pully bone piece and no one now even knows what that is. When we were kids that is the piece we all wanted. Ever who got it got to make a wish and share the pull with some one else. Seems like as kids we always had something to do that was fun. We would play outside and no one ever tried to steal us. We had to be in by dark. Coming up the road you could smell the food cooking. We had no air conditioners so the windows were open and the breeze blowing.
Back to my chicken I had today. I got my grease really hot. Took a bowl with bread flour in it added pepper and salt then I put my chicken in and shook it up in the bowl. That way it is all floured really good. Dropped in the hot grease then I sprinkled with mrs. dash originial. Cook and don't turn until the one side is pretty brown. Then turn it over. After it has browned on both sides and cooked thru to keep it from drying out put a lid on not all the way leave an escape for the mositure. Cook on low and it gets so tender let is simmer not to long you don't want it to soak up the grease. Take out of pan and brown paper instead of paper towel is the best for soaking up the grease. Now serve and oh wow it was so good.

Why the Title

Why in the world would someone make a blog about chicken. Well I can tell you why. Because for the last 3 years that is all we eat is chicken. My husband had to take chemo for a year and red meat made him sick so with all the love I have for him I quit the red meat also. So it was chicken cooked in many different ways. Then I got ideas of all kinds of ways to fix chicken. I would barbecue chicken, bake chicken make chicken casseroles. I would spice it up make it mild or hot. Then all of a sudden I got sick of chicken. It seemed like everyday I had chicken left over in the fridge. So I bought me a food processor and I went to chopping chicken I could kill a lot of chicken in a processor as fine as I wanted it. Then I started adding all kind of ingredients and wow the chicken got life again on the taste buds. So I thought ok I will make chicken salad and sell it. In todays economy everyone can use some extra money right. Then I thought I would sell bag lunches to bussiness with chicken salad and fried chicken and barbecue chicken and so forth. My kids laugh all the time because they think I come up with so many ideas of what to do. I have worked all my life and no matter how full my plate gets I still want to find something to do. Anyway I started this blog to share my chicken salad and recipes with who ever wants it. My friends and people I sold chicken salad to said it was the best they ever had. I say thank you because I always have chicken.
My chicken story started when I was a little girl. My dad was a preacher and every Sunday we would be invited to someones house to eat and sure enough there it was on the table fried chicken the best fried chicken in the world. Southern women know how to fry some chicken. My dad would say I know everyone in this church feeds us fried chicken. So all my life it was chicken and chicken and chicken. So foloow this blog order some chicken salad or take a recipe and feed your family chicken. I will post pictures later.
